Smooth Hummus from Garbanzo Beans

Hummus is the Arabic word for the bean itself, so this dish sidesteps the naming dispute entirely. The bureau notes this with respect.

Ingredients

  • 1 can (15 oz) garbanzo beans, drained
  • ¼ cup tahini
  • 2 tablespoons lemon juice, plus more to taste
  • 1 small garlic clove
  • 2 tablespoons olive oil, plus more for serving
  • ½ teaspoon ground cumin
  • ½ teaspoon fine salt
  • 2 to 4 tablespoons ice water

Method

  1. Process the tahini and lemon juice in a food processor for 1 minute, until pale and thick.
  2. Add the garlic, olive oil, cumin, and salt. Process for 30 seconds.
  3. Add the beans and process for 2 to 3 minutes, scraping down the sides once or twice.
  4. With the motor running, add the ice water a tablespoon at a time until the hummus is smooth and light.
  5. Taste and adjust the salt and lemon. Serve with a pour of olive oil and a pinch of paprika.

Notes on File

  • For a smoother result, simmer the canned beans with ½ teaspoon of baking soda for 15 to 20 minutes, then rinse, before processing.
  • Keeps for 5 days in the refrigerator.
